Efficiently run

It was efficiently run It would have been helpful to be given more guidance on how to move around the pdf document eg to have pointed out there was a search option A lot of time spent scanning through the pages Thanks for the putting on the course

The staffs were helpful and approachable The course content was clearly laid out and discussed Communication was clear and even if you need clarification they would gladly help you out

BEST FOOD SAFETY COURSE IN NEW ZELAND

The Course was effective yet simple for every body to understand It focused on core concepts to be undertaken in food safety on the shop floor with a practical approach rather than being a theoretical rhetoric session

Course was good and I learnt a lot and am more confident making coffee now It would have been good to cover some basic milk alternative milks heating frothing I understand this is a separate course but some basic techniques would have been useful until I can do the milk course

1-Day Foraging Course

The meal made from native and foraged items was super delicious and unique and the paper resource given about edible plants items was good It was a big let down that we couldn t do the forage walk due to track slippage They really should have checked beforehand as the cyclone would likely have caused some damage I did very much dislike how half of the day was very much off topic and not about foraging However they did provide a slideshow of lots of edible plants which was good It s a real shame and I wouldn t have gone on the trip if I knew that there wouldn t really be much foraging at all or too much talking about other stuff However the speaker directing us through the day was incredibly friendly and is very knowledgeable One thing I did find concerning though is that they didn t mention the laxative affects that some of the items could have of you eat too much

Was very helpful and definitely a course I needed to take as these basic skills is likely to be the most important skill set to remember in a kitchen Not only in my commercial kitchen but also at home

Presenter was clear and provided a lot

Presenter was clear and provided a lot of information but presentation style would greatly improve with a few more anecdotes or witty comments etc given that the topic can be rather dry FYI the test took over 6 and half hours to complete which I assume is necessary

NZ School of Food and Wine Artisan Breads - bread dough to cibatta

Venue was a well-equipped professional cooking school kitchen This gave plenty of space for each student and a reasonable supply of ovens The instructor appeared well qualified and was experienced as a cooking instructor offering many hints and tips plus keeping things moving Most of the items I cooked were successful all the recipes were definitely capable of good results Was a little surprised to be involved with the rest of the class in cleaning up at the end of the course

Push Through

I felt there was too much of a focus to get as many through I would prefer a more modular approach to each area and the no questions during the sessions losses opportunities for the group To depart with confidence into the reality is the key I would have been happier to pay more I felt for younger participants who lacked experience in coaching influencing which is the key to managing within the law
